Oenologist power couple David Marcel and Loreto Garau are breathing new life into the Maule Valley. David left his home in the Basque Country for love but stayed for the vines, some of the oldest he had ever seen. He became fascinated by traditional winemaking and the current plight of small growers. While remaining faithful to history David and Loreto want to see the world drinking Pipeño. Their wines have our drinking pleasure in mind and the Chilean Old-South at heart.
David works with one vineyard of Paiís, Carignan - 100+ and 80 years respectively - as well as some younger Cab Franc – in the Loncomilla Valley, Un-irrigated bush vines on shallow alluvial soils. The idea is to vinify traditionally but on a marketable scale. Keeping the spirit of Pipeño alive, David destems but is not afraid to whole bunch to increase the juiciness. He ferments and ages in big concrete tanks, presses quickly and bottles the same year.
